Gah! I love me some sweet potato fries. If they’re on the menu at a restaurant, I’m ordering them. All that fried, goodness is not exactly the best thing for you, however, so I wanted to try to recreate them at home. They are super-easy to make and pretty darn tasty too! I love the bit of kick the cayenne gives it. But then again, I’ve been known to eat siracha like most people eat ketchup, so feel free to leave it off, if you’re not as into it as I am.
Cut and Peel 3-5 sweet potatoes and put in a large bowl. Sprinkle with olive oil, brown sugar, cinnamon, cayenne pepper, sea salt, black pepper and honey mustard and stir to coat all. Place in a single layer on a baking sheet and bake at 350 until crispy (about 45 min), turning once.
